Where possible, ingredients are organic and local. Wheat flour is from the local mill. Gluten Free and Spelt flour comes from Huntingdon. Unfortunately Min has not been able to find a local producer of rice flour but has every intention of buying a paddy field when her lottery numbers come up.
In the Summer, Min grows her own vegetables. This year's harvest includes runner beans, fennel, swiss chard, courgettes, plum, cherry and beefsteak tomatoes and her compost pile is usually a good source for potatoes. Her plum tree usually yields enough fruit to feed an army and is the inspiration behind her plum parfait, plum muffins and Tuscan plum cake. Kind neighbours and clients donate apples, beetroot, carrots, beans and salad ( all organic). The winter harvest consists of swiss chard but there is every intention to be more inventive!
Butter, milk and yoghurt are local, organic and untreated. This means that the dairy products are traceable have better flavour and Min believes they help build up a body's immunity.
Eggs are local, free-range and, where possible organic.
Chocolate is Valrhona or Green and Black's.
Food colouring pastes and flavourings are natural or nature identical where possible but sometimes fake is best. You get the most beautiful
colours for butter icing.
